Cookies!

I'm not baking today, or tomorrow, or probably even Friday, but I had a request for a cut out cookie recipe, so, here goes-

I've never made any other kind of cut outs, my mom's been making these for 30 years, (she got the recipe from a friend's mom when she was a newlywed) and I've just kept them going, who knows where the recipe came from originally.

Sugar Cookies-

Ingredients-
1 C Shortening
1 C Sugar
2 Eggs
1 Tsp Vanilla Extract
2 3/4 C Flour
3/4 Tsp Salt
1/2 Tsp Baking Powder
1/2 Tsp Baking Soda

Blend together Sugar and Shortening until creamy.

Add Eggs and Vanilla (I go really heavy on the Vanilla)

Combine dry ingredients in a separate bowl and sift in gradually.

Refrigerate 1 hour.

Preheat oven to 375 degrees.

Cover counter or cutting board with flour, roll rolling pin through the cover. Let dough sit out 10-15 minutes, then place softball size chunk of dough in flour and roll to 1/4-1/2 thickness. (Thin dough makes crispy cut outs, thick makes fluffy ones) Cut out, place 1" apart on ungreased cookie sheet. Bake 8-10 minutes. Let set on cookie sheet 2 minutes before moving to cooling rack.

Decorate as desired.

Also, note-

If you're short on time but still want the taste, skip the refrigeration and roll dough into 1" balls and roll in white or colored sugar. Bake the same way for soft, moist, traditional sugar cookies.

Hope that helps!

P.S. Fudge just uses traditional sized chocolate chips like you use for baking chocolate chip cookies.
