Menu Monday and a pile of other stuff

I'm so far behind after this weekend! Be patient with me today, blogs will be coming in spurts as I get a few minutes here and there.

I'm currently 9 items into my 24 item to do list and taking a break to bring you a quick recap of this weekend and my "Menu Monday" and then I need to go for a run. They finally finished the road construction in my neighborhood! I'm so excited to not have any creepy construction workers watching me run by them! I've been skipping running the last few weeks because of them, I'm just not a fan of having someone I don't know watch me run, especially when that someone is several someone's who are in a large group of big dirty guys. Yuck!

I'm mostly behind because this weekend was a wedding weekend. Shooting a wedding that is. It was a bit different from the wedding's we usually shoot. Not because of some whacky theme, or some drunken relative or embarrassing family fact coming out, because of the age of the couple. It wasn't either of their first marriages (his second, her third) but they were just as excited as any young couple freshly fallen in love. Both had lost their last spouse to cancer, but neither was afraid to take the leap and say their vows. Normally, you see couples later in life not bothering, but these people did. It was sweet, I didn't necessarily expect it to be, but it was. Check out the Photoblog for pictures.

Anyways, on to Menu Monday-

Monday-
Crockpot Chicken, Flavored Rice, Steamed Broccoli

Rinse chicken under cool water til water runs clear, remove any insides and rinse again
Place chicken in crockpot
Pour in one can low-sodium chicken broth
Cover and leave on low 7-8 hours, or high 4-5 hours

It's amazingly juicy either way and great with potatoes, rice, salad, anything really. Typically we get enough meat on one chicken to cook two dinners with a few leftovers for lunch, for around $5 a chicken. You can't beat that!

Tuesday-
Angel Hair Pasta with Marinara, Garlic Bread and Steamed Broccoli

Wednesday-
Chicken and Dressing

Grease bottom and sides of casserole dish.
Make stuffing into dish following microwave directions on a box of Chicken Flavored Stovetop Stuffing.
Place small pieces of cooked chicken breast on top of stuffing. (I'll use my leftover crock-pot chicken)

Pour one can reduced fat Cream of Chicken Soup over stuffing and chicken
Bake at 350 for 15 minutes.

Thursday-
Takeout after my 13 hour work day

Friday-
Burgers, Fries and Fruit (using up the frozen burger patties from this summer)

Saturday-
Honey BBQ Boneless Ribs, Roasted Potatoes, Homemade Applesauce

Our grocery store sells "country style boneless ribs", (they're still all connected though) they're amazingly tender, and need very little work. I do a quick rub of 1 part salt, 1 part black pepper, 1 part Paprika, on one side only, then dip both sides in HoneyBBQ Sauce, and grill 6-7 minutes on each side, then slice into strips. So moist and tender, and much less messy than bone in ribs!

Sunday-
More Burgers, Pasta Salad and Fruit
(need to use a few more buns out of the bag before freezing the leftovers!)

Do you make the garlic bread yourself.. if so could you share the recipe I have been looking for a good.. but.. quick garlic bread recipe!
