I missed Menu Monday!

Probably because my menu for this week only contains 2 meals that we'll be eating at home. :)

Monday- (we ate)
Homemade Chicken Fingers, Curly Fries and Strawberries

(I cheat on the fries with the frozen kind every once in awhile, if you bake them instead of fry them you're not adding any extra grease or anything, so it's just all the seasonings and preservatives that are bad for you)

Tuesday- (tonight)
Mastachioli (otherwise known as German Lasanga)
With Steamed Broccoli and Bread

Prep-
Cook 3/4 of a box of Ziti, Spiral, or Penne pasta, rinse set aside
While pasta is boiling-
Brown 3/4 pound ground beef in saucepan, add favorite pasta sauce and season to taste

Cover cooked pasta with sauce and mix until covered (I usually just dump them both into the larger of the two pans used earlier to save dishes)

Combine one small container Light Ricotta Cheese and one 8oz. bag Shredded Mozzarella or Italian Blend Cheese in a medium mixing bowl

Grease bottom and sides of a deep casserole dish.

Fill bottom 1/4-1/3 with pasta/sauce
Cover in cheese mixture

Repeat until dish is full

Bake in 350 oven 30-40 minutes or until cheese is melted and sauce is bubbly

This is great prepped ahead of time and put in the fridge to bake at dinner time, or it freezes wonderfully for a later date!

Wednesday-
Leftover Mastachioli

We're possibly going out that night, so to make things easy and so we don't waste food, we're planning on leftovers already

Thursday-
DATE NIGHT!!!
Going to the driving range and then picking up Chinese and a RedBox movie on the way home is the plan right now.

Friday through Sunday-
Cottage

I'm cooking Friday and Sunday, so once I know what I'm doing I'll try to remember to let you know.
