So we didn't end up going to the cottage per normal this weekend.
That was a good thing and a bad thing.
I don't know what to do with weekends home without plans anymore! I was going stir crazy this morning! We talked about going out, but that took forever to happen, and by the time it did, I was too annoyed at how long it had taken the husband to get ready that we ended up not going anywhere.
So, we stayed home and did a lot of cleaning. A little catching up on our DVR, a little XBox playing (for the husband) a little computer file organizing (for me) and ALOT of nothing. It was actually not too bad.
Then, it got to dinner time. It was storming out so I didn't feel like going to the store, but we didn't have the stuff for any one really regular meal, so, I made something up!
Angel Hair Pasta, topped with two small grilled chicken strips and covered in a homemade, thicker than usual alfredo sauce that poured on more like regular marinara sauce would when poured over pasta. And strangely enough, it was really good! I didn't feel quilty eating the thick sauce, cause you only needed a tiny bit because it was so rich.
Thicker Alfredo Sauce Recipe-
1/2 stick butter
1/3 cup milk (about)
1/3 cup grated parmesan cheese (again, about, I don't measure anything)
1 Tbsp flour
Melt butter on low on the stove, add milk and whisk constantly til the two liquids are blended into one with practically no separation. Gradually add parmesan and whisk continuously until smooth. After all the parmesan has been added, slowly sprinkle in flour, whisk 30 seconds and sauce should thicken.
It was fantastic! I was shocked! It's the lower fat version of my normal sauce to begin with because it uses milk instead of the recipes cream, and I basically always use the low fat in the shaker can generic parmesan cheese. The 2-3 Tbsp or so it takes to cover the pasta to get enough flavor can't be that bad. You could use margarine to cut it down even more, or fat free cheese.
The husband was very impressed, so I was excited! I love it when making things up works, of course that's what I do most the time, because seriously, 95% of my dinner recipes are either learned from watching my mom, made up really simple but tasty things, or memorized from being cooked so many times. My husband has really simple taste, and I'm honestly a bit of a picky eater, so it works for me! Whenever we're at a fancy restaurant or my mom cooks more gourmet meals, he never likes them as much as my easy thrown together stuff, so if it works for him, I'm good with that!
