Menu Monday

Okay, so my week is here, and it kind of stinks already, let's just get that out there now. We had an amazing, relaxing weekend at home, alone, and now the week is here and it stinks, and it's Monday, so I'm in a crummy mood. I'll try to post something happier later.

Anyways, onto the business of things-

My Menu for this week-

MONDAY-
Pork Chops on the grill (if it doesn't rain) Salt Potatoes and Fresh NY State Corn on the Cob!!!! ***I LOVE our local corn, seriously it's amazing!

TUESDAY-
Leftover Pizza from the Sunday, simply because it will need to be eaten, and fresh fruit

WEDNESDAY-
Cheap Steak on the Grill I've been saving in the freezer, probably more salt potatoes and corn

THURSDAY-
Quesadillas and Fresh Fruit before worship practice

FRIDAY-
Date night to Red Robin (on a gift card)

SATURDAY-
Homemade Pizza (recipe)

SUNDAY-
Crockpot Chicken and Rice Soup and fresh bread

Crockpot Chicken and Rice Soup-
1 1/2 pounds shredded cooked chicken (I use the leftovers from my crockpot chicken last time I cooked one I froze the extra meat)
1 package chicken flavored Rice (like the instant Uncle Ben's or generic stuff)
1/2 bag frozen corn
15-20 baby carrots chopped into 1/3 or so inch pieces
1 32oz Carton Swanson Fat Free Low Sodium Chicken Broth
1 1/2 Cups Water

Put all ingredients in a large crockpot and simmer on high 1-2 hours, or low 3-4 hours.

It's the perfect throw it in before church meal! And, in all reality the rice is the worst thing for you that's in it. You can add extra veggies (onion and celery are great) but those are just the ones I usually have around the house.

I know it's weird to have soup in the summer, but Rochester hasn't had a summer yet. We've had 3 days where the average temperature in "Greater Rochester" (as they like to refer to it) was above 80. It's mostly been a bunch of rain :( Blah! So, assuming this weekend's no different than the last few, soup will seem pretty normal for the weather.
