
So, day 2 and so far so good! I'm blogging, even if it is just my menu so far!
Monday-
Some form of takeout for me and whatever the kids are having at work for the husband cause he's actually getting some overtime tonight!
Tuesday-
Defrosted steaks leftover from this summer, smashed potatoes and steamed broccoli
Wednesday-
Whole Crockpot Chicken, Rice and Steamed Broccoli
Thursday-
Chicken and Dressing and Homemade Applesauce
Applesauce-
Peel, core and thinly slice 4 apples.
(my favorite combos are 2 Cortland and 2 Granny Smiths)
Place in large microwavable bowl.
Coat with mixture of-
1/2 C Brown Sugar
2 TB White Sugar
2 Ts Cinnamon
Dash of Nutmeg
Microwave 4 minutes to start, stir and microwave in 1 minute intervals, stirring between minutes to check for consistency, (usually takes 6-7 minutes in microwave) Apples should be mushy, easily cut through with a spoon and the juice should be evenly dispersed among the apples.
Makes 2 quarts, and leftovers freeze wonderfully!
Friday-
Photoshoots until 7:00, then quickie tacos
Saturday-
Crockpot Chicken and Rice Soup
Sunday-
Who knows, can't think that far yet, but it will be something quick between church and youth group.
